Banana peel curry

Briony's Banana Peel Curry

On Wednesday 29th April, Briony May Williams joined us in the studio to show us how we make Banana Peel Curry from kitchen leftovers for Stop Food Waste Day.

Ingredients

  • Peel of 3 bananas

  • 2 tbsp lemon juice

  • 2 red onions, peeled and diced

  • 2 tbsp curry powder

  • 1 tbsp mixed herbs

  • 1 tbsp tomato puree

  • 1 garlic clove, peeled and diced/grated

  • 20g fresh ginger, peeled and grated

  • 1 tin chopped tomatoes

  • 250ml boiling water

Method

  1. Chop off 1cm of the top and bottom of the banana peel then use a teaspoon to scrape out the white pith.

  2. Finely slice the banana peel then place in a bowl of water with the lemon juice. Leave to soak for 30 minutes.

  3. In a large frying pan, heat up some oil then add the diced onions and cook until soft and browning.

  4. Add the curry powder, herbs, tomato puree, garlic and ginger then mix for a minute until fragrant.

  5. Drain the banana peel then add to the pan and mix.

  6. Add the chopped tomatoes and boiling water then stir to combine. Cover and simmer for 30 minutes adding a splash of water if it looks too dry.

  7. Serve with basmati rice and a sprig of fresh coriander.
