But many Italians have strong opinions about how, when and what to eat, and some unwitting faux pas from visitors can send purists into a frenzy. Briony meets the innovators adding controversial ingredients to pizza and new flavours to ice cream, and the traditionalists who want to keep things exactly as they are.
